Chicken and Portabella Mushrooms

Moist chicken baked, serve with a side of aspargus.
Ingredients
- 18 oz Chicken Breast
- 1/4 cup Italian Bread Crumbs
- 1/4 cup Parmesan Cheese
- 2 tbsp Olive Oil
- 8 oz Portabella Mushroom
- 1/4 cup Onions
- 1 tsp Minced Garlic
- 1/4 cup Chardonay
- 1 cup Chicken Stock
Directions
Preheat oven to 350 degrees, mix bread crumbs and parmesan cheese in a baggie. Shake chicken with the crumbs and brown each side on a hot skillet. Place in a casserole dish sprayed with no stick spray. Place olive oil in pan with sliced mushrooms, chopped onions and minced garlic. Cook 5 minutes add wine, reduce. Place mushrooms on top of chicken. In hot pan add chicken stock, bring to boil add to casserole. Bake for 45 minutes
