Chicken Salad with Red Grapes and Citrus-Honey Dressing

From Cooking Light Fresh Food Fast. Delicious and easy to prepare salad. I grilled the chicken and sliced it over the greens. I'm not a fan of "mixed greens" so I used an Italian blend. Definitely will make this again!
Ingredients
- 8 cups Italian Salad Blend
- 8 oz Chicken Breast
- 1 cup Seedless Grapes, Red Or Green
- 2/3 cup Celery
- 2 tbsp Lemon Juice, Freshly Squeezed
- 2 tbsp Juices - Orange Juice
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Organic Raw Honey
- 2 tsp Lemon Peel
- 1/2 tsp Coarse Kosher Salt
- 1/8 tsp Ground Black Pepper
Directions
Combine lettuce, grapes and celery in a bowl and add citrus-honey dressing.
For the dressing:
Combine lemon juice, orange juice, olive oil, honey, lemon rind, salt and pepper in a bowl and wisk together. Pour over salad.
Slice grilled chicken and place over dressed salad, or toss with salad and dressing.
