Chicken Tikka Masala

This orange-hued, yogurt-based chicken curry with a spicy kick is one of the most popular Indian dishes. Antioxidant-rich cloves have anti-inflammatory benefits, while cardamom can help promote digestive health.

INGREDIENTS

SERVES 4

  • 6 clove garlic
  • 6 tsp Fresh Ginger Root
  • 1 tsp Spices, cardamom
  • 2 tsp Ground Coriander
  • 2 tsp Ground Cumin
  • 2 tsp Garam Masala Spice
  • 1 tsp Kosher Salt
  • 2 cups Greek Non-fat Yogurt, Plain
  • 4 and raw boneless, skinless chicken breast
  • 1 tbsp Vegetable Oil
  • 1 medium White Onion
  • 4 cups Grape Tomatoes
  • 1 tbsp Tomato Paste
  • 1 cup skim milk
  • 1/2 cup Fresh Cilantro Leaves

DIRECTIONS

1 Make a marinade by mixing garlic, ginger, turmeric, cardamom, coriander, cumin, garam masala and salt in the yogurt. Let sit 3 hours or overnight.
2 Preheat oven to 500°F.
3 Reserving the marinade, remove chicken cubes and put them on a foil-lined sheet pan. Broil chicken in oven until the edges start to brown (about 15 minutes).
4 Warm a large pot or saucepan on medium heat. When water beads and evaporates, add oil, onions and tomatoes. Cook until onions become translucent and tomatoes start to split (about 5 to 7 minutes). Add tomato paste and cook 2 minutes.
5 Add milk and stir until tomato paste dissolves. If the tomatoes haven’t burst and dissolved, use a potato masher to crush them or blend the mixture in a food processor or blender until smooth. Simmer mixture on low 5 minutes and add yogurt marinade. Stir until well-combined.
6 Remove chicken from oven and add it to sauce. Cook 5 minutes.
7 Garnish with cilantro and serve.
