A healthy vegetable soup with chicken and potatoes.

Ingredients

Directions

Boil chicken, shred or dice it when cooked.

Peel and dice potatoes.

Add chicken and potatoes to can (Del Monte)vegetables, tomatoes, Rotel, and broth. Cook until potatoes are tender.

I personally don't like whole or diced tomatoes, but they can be used instead of crushed.

More salt might be needed to suit individual taste.

I cook my chicken in a pressure cooker while the veggies cook. Takes less time. I also use the broth from the chicken I cooked.
