chicken and zucchini

Great chicken and vegetable recipe... serve over rice.
Ingredients
- 1 tbsp Vegetable Oil
- 2 lb Skinless Chicken Thighs
- 3 tbsp All-purpose Flour
- 1 tsp Salt
- 1 tsp Pepper, Black
- 1/4 cup Chopped Onions
- 1/4 cup Green Bell Pepper
- 2 cloves Garlic Clove
- 14 oz Chicken Broth, Reduced Sodium
- 1/2 cup Water
- 3 cups Zucchini
Directions
1. Coat dutch oven with cooking spray add oil. Put on medium-high heat till hot. Add chicken and cook until brown all over. Drain chicken drippings and return chicken to pan.
2. Combine flour, salt, pepper and 1tsp cumin in bowl and mix. Add onion, bell pepper and garlic... mix gently. put mixture over chicken then add broth and water and bring to boil. Reduce heat and simmer uncovered for 25 minutes (stir frequently). Add zucchini and simmer until chicken is tender (20 min).
