Chile Verde Enchiladas

Quick and easy enchiladas created from warehouse club prepared chile verde.
Ingredients
- 15 oz Chile Verde
- 8 tortilla Low-carb Totilla
- 1 cup Mexican Style Natural Four Cheese 2% Milk Finely Shredded
- 1 3/4 cups Green Chile Enchilada Sauce
- 200 g Green Onions
Directions
Preheat the oven to 375℉. Shred the chile verde with a fork. Spray cooking spray into 7 x 11 pan.
Mix together the chile verde, green onions, and all but 1/4 cup of the cheese.
Pour a bit of enchilada sauce into the pan. Dip each tortilla in enchilada sauce, and fill with 1/8 of the chile verde mixture, and roll into an enchilada.
Cover the pan with foil and bake for 30 minutes. Check for moisture; if too wet, remove the foil and cook until satisfactory.
Remove the foil. Sprinkle the reserved cheese over the top and cook for 5 ore minutes.
