This recipe is perfect for chili leftovers. I used the leftovers from my Chipotle Chorizo White Bean Chili recipe: It’s rich and hearty, with a heavy amount of heat that the sweet potato fries will help mellow out.

Ingredients

  • 2 medium cooked sweet potato, cut into strips
  • 3 cups White Bean Chili

Directions

1. Heat chili in a sauce pain until simmering
2. Place fries on a platter or in a bowl and pour chili over

**This recipe uses roasted white sweet potato fries, which you can make using my "base recipe":

5 cups (about 2 medium) sweet potatoes, sliced into 1/4 inch wide strips
1 1/2 tbsp algae oil
1/2 tsp salt

1. Preheat oven to 415 degrees F
2. Drizzle half the oil onto a parchment lined baking sheet
3. Lay sweet potato strips onto baking sheet in even lines
4. Drizzle salt and remainder of oil over strips
5. Roast for 35 minutes, flipping halfway through
