white bean chicken chili
Ingredients
- 2 lb Chicken (ground)
- 2 tbsp Olive Oil
- 4 cloves Garlic Clove
- 1 cup Onions
- 1 tsp Salt
- 2 tbsp Cumin Seed
- 1/2 tbsp Fennel Seed
- 1 tbsp Oregano, Ground
- 2 tsp Chili Powder
- 3 tbsp Flour
- 45 oz Cannellini Beans
- 1 lb Chard, Swiss
- 1 1/2 cups
- 6 cups Chicken Stock
- 1/2 tbsp Parmesan Cheese
- 1 tsp Pepper, Black
- 1/4 cup Parsley
Directions
In large heavy bottom saucepan or dutch oven, heat oil over medium high heat. Add onion and cook to translucent (5 min). add garlic cook 30 sec then add chicken, 1 tsp salt, cumin,fennel seeds, oregano and chili powder. Stir frequently until chicken cooked through (8min) stir in flour, add beans (from 3 x 15 oz cans that have been drained), swiss chard, corn and chicken stock. Bring to simmer and scrape up brown bits from bottom of pan with wooden spoon. Simmer 60 minutes until chili has thickened (reduce liquid about 50%).add red pepper flakes and simmer another 10 min then season with salt and pepper to taste.
Ladle into serving bowel and sprinkle with parmesan cheese and chopped parsley. Makes 10 servings.
