You’ve gotta love a bowl of noodles -- especially when bathed in a flavorful sauce and paired with crunchy bok choy. And to further entice your taste buds, you’ll complete these Asian-inspired noodles with a sprinkling of sweet and spicy gochujang (a Korean red chili paste) and sesame seeds.

Ingredients

Directions

1. In a large bowl, whisk together sesame oil, peanut butter, tamari, lime juice and coconut nectar (or honey).
2. Prepare noodles (or whole grain linguine) according to package directions. Drain; stir noodles in the saucepan with several ice cubes to cool; drain well.
3. Transfer drained noodles to large bowl with the sesame mixture; toss with tongs to combine. Add bok choy and cilantro, and toss to combine.
4. Transfer to individual bowls, drizzle with gochujang (or other hot sauce), sprinkle with sesame seeds and serve.

Notes:
Noodles can be stored in a sealed container, chilled and served later.
