Chipotle Raspberry Meatloaf

A sweet spicy alternative to your everyday meatloaf
Ingredients
- 2 lb 93% Lean Hamburger
- 4 oz Onion (white - Raw Chopped)
- 4 oz Roasted Red Peppers
- 1 tblsp Cracked Black Pepper
- 1 tbsp Sea Salt
- 9 oz Raspberry Chipotle Sauce
- 1 1/2 cups Egg Whites
- 1 cup Panko Bread Crumbs
Directions
Mix all ingredients in a large bowl.
Reserve 4 oz of the Sweet Baby Ray's Raspberry Chipotle BBQ sauce for topping.
Place all ingredients in a loaf pan sprayed with Pam.
Pour remaining BBQ sauce over the top of meatloaf.
Preheat oven to 350 and bake 50-60 minutes or until internal temperature is 160 degrees
Remove from oven and let cool for 20 to 30 minutes.
Flip meatloaf out of bread pan onto a cutting board and let fat drain from meatloaf
Slice into approx. 12 slices (about the thickness of a slice of bread)
