Choco-Almond Truffles (with peanut butter)

Ingredients

- 200 g Organic Coconut Medium Flakes
- 200 g Shelled Almonds
- 2 tbsp Virgin Coconut Oil
- 1/2 cup Cocoa Powder, Natural Unsweetened
- 0 oz Water
- 2 tsp Cinnamon
- 89 g Natural Peanut Butter
Directions
Bring all ingredients to room temperature because the coconut oil will harden if the other ingredients are cold. Mix all ingredients in a food processor for 1 minute. I have a 9 cup food processor, and it's actually not quite big enough for this recipe. It worked, but I had to stop, stir around with the hard scraper and start up again. It took longer than 1 minute to mix it all together. Place the mixture in the refrigerator for at least 10 minutes. Then make balls, about 1 1/4 inch in diameter. You can then roll the balls in cocoa powder, coconut or chopped almonds. I didn't do that. Place the balls in the frig before serving.
