Chocolate-Banana sunflower muffins

These are packed full of energy-boosting, feel-good ingredients that have excellent nutritional benefits. You will find it hard to believe that these guilt-free muffins are actually good for you!
Ingredients
- 50 g Ultra Light Spreadable Butter
- 50 g Chocolate (dark)
- 15 g Cocoa Powder
- 50 g Oats (quaker)
- 1 Medium Egg
- 160 g Self-raising Flour
- 40 g Caster Sugar
- 25 g Pumpkin Seeds
- 1 tsp Vanilla Extract
- 1/2 tsp Baking Powder
- 50 mL Skimmed Milk
- 1 Banana, large
- 150 g Fat Free Natural Yogurt
Directions
1) Preheat the oven to 200C/fan 180C
2) Warm the butter and chocolate together in a pan over a gentle heat. Once melted, remove from heat and allow to cool slightly.
3) Mash the banana, then mix it with all the remaining ingredients in a bowl, then add the chocolate mixture. Mix well, but do not overmix. Spoon into muffin cases and bake for 15 to 18 minutes or until well risen and golden brown.
4) Cool on a wire tray, and then enjoy!
