These bites may taste like cookie dough, but that’s where the similarities stop — these are actually good for you! You’ll get plenty of protein from a combination of chickpeas, ground flaxseed, peanut butter and peanut powder. Consisting of finely crushed roasted peanuts, peanut powder is a whole-food source of protein.



1. Add well-drained chickpeas, ground flaxseed, maple syrup, liquefied coconut oil, vanilla and almond extracts, salt, and cayenne to a food processor. Cover and puree until creamy, about 2 minutes. Add the peanut butter and peanut powder and blend until well combined, about 1 minute. Add the chocolate chips and pulse 2 or 3 times to evenly combine. (Hint: If you prefer chocolate chips to keep their shape instead of “melt” into the mixture, chill the mixture for 1 hour then stir in chocolate chips.)
2. Transfer the mixture to a bowl. With clean hands, form into 12 balls, about 2 tablespoons each.
3. Place in a sealed container. Store in the refrigerator for 1 week or freezer for 1 month.
