Chocolate-Chip Cookie Dough Oatmeal

This “dough” gets its creaminess from a mixture of oats, almond butter and vanilla almond milk, and it manages to pack plenty of protein and fiber into one seriously delicious bowl. Dark chocolate chips (or cacao nibs, if you want more chocolate flavor) adds essential minerals to your oatmeal, including manganese, a mineral important for joint health, and zinc for strong immunity.

INGREDIENTS

SERVES 1

  • 1/3 cup Rolled Oats
  • 2/3 cup Nonfat Milk
  • 1/2 tbsp Pure Vanilla Extract
  • 1/8 tsp Pure Almond Extract
  • 2 tbsp Cacao Nibs
  • 1 tbsp Almond Butter

DIRECTIONS

1 Heat the oatmeal, milk and extracts in a saucepan over medium heat, stirring every few minutes until the liquid is absorbed, 6 to 8 minutes. Remove from heat
2 Stir in the almond butter and 1 Tbsp of the chocolate chips
3 Serve immediately, garnished with the remaining chocolate chips.

5 Add a drop of orange extract for a bit of tangy flavor.
