These easy, no-bake chocolate bars are loaded with 100 percent whole-grain puffed brown rice cereal.

Directions

1. Line the bottom of a small baking pan with unbleached parchment paper. Set aside.
2. In a double boiler (or heatproof bowl placed over hot water), melt bittersweet (or semi-sweet) chocolate chips with coconut oil over medium-low heat, stirring occasionally until smooth. Stir in vanilla extract and salt until combined.
3. Remove from heat, add puffed rice cereal, and stir until evenly coated.
4. Transfer mixture to the prepared baking pan and spread out using a spatula into an even layer, about 5- by 6-inches.
5. Place in the refrigerator to set, about 15 minutes. Cut into 4 bars and serve. Or place in a sealed container and store in the freezer.
