Chocolate Crispy Rice Bars

These easy, no-bake chocolate bars are loaded with 100 percent whole-grain puffed brown rice cereal.

INGREDIENTS

SERVES 8

  • 4 oz Fair Trade Organic 65% Cacao Bittersweet Chocolate Chips
  • 1 tbsp Virgin Coconut Oil
  • 1/2 tsp Pure Vanilla Extract
  • 1/8 tsp Sea Salt
  • 3/4 cup Puffed Brown Rice Cereal

DIRECTIONS

1 Line the bottom of a small baking pan with unbleached parchment paper. Set aside.
2 In a double boiler (or heatproof bowl placed over hot water), melt bittersweet (or semi-sweet) chocolate chips with coconut oil over medium-low heat, stirring occasionally until smooth. Stir in vanilla extract and salt until combined.
3 Remove from heat, add puffed rice cereal, and stir until evenly coated.
4 Transfer mixture to the prepared baking pan and spread out using a spatula into an even layer, about 5- by 6-inches.
5 Place in the refrigerator to set, about 15 minutes. Cut into 4 bars and serve. Or place in a sealed container and store in the freezer.
