Christa's Mango Tilapia

Tilapia with Mango Salsa served over rice.
Ingredients
- 4 Tilapia Fillets
- 1 tbsp Olive Oil
- 1 1/2 tbsp Orange Zest
- 1/4 cup Orange Juice
- 1 Mango
- 1/4 cup Onion, Sweet
- 1 medium raw Roma Tomato
- 1 fruit Limes
- 1 Jalapeno Pepper
- 1 tbsp Ginger Root
- 1/4 cup Cilantro
- 1 tsp Kosher Salt
- 1/2 cup Crushed Pineapple
- 1 cup White Rice
Directions
Preheat Oven to 400.
Shallow baking dish, combine olive oil, orange zest, orange juice, salt and pepper to taste. Rinse fillets and pat dry, lay in pan and coat with seasoning.
Bake 10-12 mins until fish can flake with fork.
Combine remaining ingredients to make Mango salsa.
Serve talapia over rice and top with salsa.
