Christine's Kitchen Sink Salad

Healthy salad that you can put together with any fruits or vegetables in your fridge. Base is arugala. Throw in whatever you have on hand in the fridge.
Ingredients
- 5 lb Arugala
- 1 cup Edamame (soy Beans)
- 1 cup Beets
- 1/2 cup Red Bell Peppers, Raw
- 1/4 cup Yellow Bell Pepper
- 1/2 cup Orange Bell Pepper
- 5 tbsp Balsamic Vinegar
- 3 tbsp Extra Virgin Olive Oil
- 1 tsp Sea Salt
- 1 tsp Ground Black Pepper
- 1 whole yiel LEMON Juice, Fresh Squeezed
- 1 tbsp Chinese Rice Wine Vinegar
- 1 medium Strawberries
- 2 medium raw Heirloom Tomato
- 2 cups Persian Or Armenian Cucumber
- 1/4 cup Pine Nuts
- 1 cup Broccli Florets
Directions
Use any vegetables, beans, fruit and nuts that you have on hand and make sure arugala is your base.
put it all together and sprinkle oil, vinegar, sea salt and ground pepper.
I make this as a vegan salad, but you can easily add cheese and any chopped up meat or poultry.
