Cinnamon Coconut Sugar Fries

Coconut sugar is lower in fructose than other sweeteners. It taste similar to brown sugar, but with the dry texture of white. This recipe pairs it with cinnamon for a nostalgic churro-like vibe, but also because the cinnamon helps lower blood sugar. (Paleo, vegan, gluten- and grain-free)

INGREDIENTS

SERVES 4

  • 2 medium cooked sweet potato
  • 2 tsp cinnamon
  • 2 tbsp Coconut Sugar

DIRECTIONS

1 In a mixing bowl, stir cinnamon and coconut sugar together
2 Add cooked sweet potato fries and toss to combine
3 *This recipe uses roasted garnet sweet potato fries, which are cooked using my "base recipe":
4 cups (about 2 medium) sweet potatoes, sliced into 1/4 inch wide strips
5 /2 tbsp algae oil
6 /2 tsp salt
7 Preheat oven to 415 degrees F
8 Drizzle half the oil onto a parchment lined baking sheet
9 Lay sweet potato strips onto baking sheet in even lines
10 Drizzle salt and remainder of oil over strips
11 Roast for 35 minutes, flipping halfway through
