For this classic recipe, a touch of smoked paprika provides an earthy, sultry flavor that rounds out the mix for a rich mouthfeel. Note that you can also use dried chickpeas after soaking them overnight and then simmering in water until soft. To remove skins for a smoother textured hummus, sprinkle with baking soda in a warm pan before you cook them and then while cooking stir vigorously and skim off loose skins.
