Classic Macaroni Salad (Modified Weight Watchers Recipe)

yummy light mayo based pasta salad
Ingredients
- 8 oz Mini Farfalle
- 4 tbsp Sour Cream, Light
- 8 tbsp Miracle Whip (fat Free)
- 4 oz Whole Dill Pickle
- 1/2 cup Peas & Carrots (frozen)
- 1/4 tsp Spices, Onion Powder
- 1/2 medium stalks Celery
- 1 middle size Red Pepper
- 1/2 cup Fat-free Shredded Cheddar Cheese
- 1/4 cup Onions, Spring Or Scallions
Directions
cook pasta, drain and then rinse and drain again.
chop scallions, red pepper and pickles.
combine scallions and pickles with sour cream, light mayo, and onion powder to create your dressing.
mix pepper, cooked peas and carrots (cooled,) with pasta and cheddar.
combine all ingredients with dressing and refrigerate for at least 2 hours to allow flavors to meld prior to serving.
