Clean Eating Parmesan Popovers

I found this recipe on the Clean Eating Magazine Website. They go great with my chili recipe.
Ingredients
- 1 egg
- 3 large Egg White
- 1 cup Silken Lite Tofu
- 1 1/2 cups Milk-1%
- 2 tbsp Extra Virgin Olive Oil
- 1 cup Organic Oat Flour
- 1/2 cup Quinoa Flour
- 1 tbsp Baking Powder
- 1/2 cup Reduce Fat Parmesan
Directions
Preheat oven to 425 degrees. Blend egg, egg whites, tofu, milk and oil in a blender or food processor until smooth.
In a medium bowl, whisk dry ingredients and parmesan cheese. Add wet ingredients and whisk until smooth. Let sit 15-20 minutes. Preheat standard muffin tin or popover pan in oven for 5 minutes. Spray pan with olive oil cooking spray. Fill cups 3/4 full. Bake 10 minutes. Reduce heat to 375 degrees and bake an addition 5 to 7 minutes or until golden brown.
