Coconut Curried Vegetables with Spaghetti Squash

Green vegetables mixed with garlic, ginger, coconut milk, curry paste, brown sugar, and cilantro. Spaghetti squash is used as a substitute for noodles.
Ingredients
- 1 cup Organic Light Coconut Milk
- 2 tbsp Red Curry Paste (gluten-free)
- 1 tsp Brown Sugar
- 3 Large Stalk (11"-12" Long)
- 6 One Grape Tomatoe
- 4 1/2 cups Spaghetti Squash, Plain
- 3 Garlic Clove
- 2 tsp Ginger Root
- 1 1/2 cups Fresh Bean Sprouts
- 5 cups Bok Choy (raw)
- 1 Leek
- 9 sprigs Cilantro, Fresh
- 2 1/2 yields Lime Juice Raw
Directions
Garlic, ginger, cilantro, leek, celery, boy choy mixed together. Add coconut milk, brown sugar, and curry paste. Boil. Add spaghetti squash.
