1. Blend together eggs, orange juice concentrate (no water added), coconut milk, honey, salt and almond extract.
2. Combine coconut flour with baking powder and whisk into batter until there are no lumps.
3. Fold in orange zest.
4. Pour batter into greased muffin cups.
5. Bake at 400F for 18-20 minutes.
