Cold Sesame Egg Noodles

Cold Sesame Egg Noodles

To make this quick-to-fix dish, you’ll simply toss fresh egg linguine with a tangy mixture of tamari, sesame oil, coconut nectar, rice vinegar and red pepper flakes. For added color and nutrition (hello, vitamin C!), you’ll then toss the saucy noodles with red bell pepper and scallions.

INGREDIENTS

  • 1 1/2 tbsp Tamari Soy Sauce
  • 1 tbsp Toasted Sesame Oil
  • 2 tsp Coconut Nectar
  • 1 1/2 tbsp Rice Vinegar
  • 1/4 tsp Crushed Red Pepper
  • 8 oz Egg Linguine
  • 1 medium red bell pepper
  • 1 medium scallions
  • 1 tsp Seeds, sesame seeds, whole, roasted and toasted

DIRECTIONS

1 In a large bowl, whisk together tamari, sesame oil, coconut nectar (or agave nectar), vinegar, and pepper flakes.
2 Prepare fresh linguine (or other fresh noodles) according to package directions in boiling salted water. Drain; stir noodles in the saucepan with several ice cubes to cool; drain well.
3 Transfer well-drained noodles to the large bowl with the tamari mixture; toss with tongs to combine. Add bell pepper and scallion and toss to combine.
4 Transfer to individual bowls, sprinkle with sesame seeds, and serve.
