Give your chicken salad sandwich an upgrade! This lunch is wrapped in collared greens. Toss in red grapes, sliced natural almonds and fresh tarragon for fruity sweetness, nuttiness and herbal flair.

Ingredients

Directions

1. Remove stems and trim the ribs from collard greens. Set aside leaves.
2. Mince stems to yield 1/4 cup.
3. In a medium bowl, stir together chicken (no skin), grapes, onions, almonds (pan-toasted, if desired), mayonnaise, vinegar, tarragon, salt and diced collard green stems.
4. Divide chicken salad mixture among collard green leaves. Roll up tightly like a burrito and serve.

Note:
Rolls can be tightly wrapped, chilled and served later.
