1. Combine ingredients together in a bowl. Lightly coat a non-stick pan with extra light olive oil or vegetable oil and heat on medium-high.

2. Once hot, add batter to make small or large pancakes as desired. Once batter starts bubbling (after a few minutes), flip and cook until golden brown, about 2-3 minutes.

If you don't enjoy the texture, you can blend the ingredients before adding to heat so that it more closely resembles pancake batter.
