Cranberry Baked Brie

Cranberry Baked Brie

Save up your saturated fat allotment for the day and indulge in this cheesy main dish. Ideally, use a 12-ounce brie wheel and serve a 3-ounce wedge in place of holiday turkey. You’ll whip up a homemade version of cranberry sauce -- the canned stuff is far too loaded with added sugars. Crisp apple slices act like better-for-you crackers to enjoy alongside the cranberry sauce.

INGREDIENTS

SERVES 4

  • 8 oz Fresh Cranberries
  • 1/3 cup Coconut Sugar
  • 1 tsp Apple Cider Vinegar
  • 1/4 tsp Rosemary, fresh
  • 1/8 tsp Sea Salt
  • 12 oz Soft-Ripened Cheese Wheel, Brie
  • 2 medium apple Granny Smith

DIRECTIONS

1 Preheat oven to 375°F.
2 In a medium saucepan, bring cranberries, coconut sugar (or turbinado sugar), 1/2 cup water, vinegar, rosemary, and salt to a boil over high.
3 Reduce heat to medium-low and simmer until thickened, about 8 to 10 minutes.
4 Meanwhile, place 12-ounce brie wheel (or four 3-ounce wedges) onto a parchment paper-lined baking dish.
5 Bake until cheese starts to ooze, about 6 minutes for wheel. (Note: Ideal if cheese is at room temperature before baking.)
6 Transfer brie to a serving platter and top with cranberry sauce.
7 Serve immediately with apple slices. (Note: If desired, sprinkle with some roasted salted pumpkin seeds (pepitas) for garnish.)
