This refreshing and vibrant dish is as delicious as it is nutritious. Containing all nine essential amino acids, quinoa is gluten-free, high in protein and an excellent source of fiber. Sweet and tart, cranberries offer anti-inflammatory and anti-cancer properties.

Directions

1. Place the water in a pot over medium high heat and bring to a boil.
2. Add the quinoa and a pinch of sea salt, place the lid on the pot and turn the heat to low.
3. Simmer for 20 minutes.
4. Add the juice from the orange, the cranberries, and parsley. Mix well.
