Creamy Vegan Spinach

INGREDIENTS

SERVES 6

  • 3/4 cup Coconut Milk Beverage Unsweetened
  • 2 tbsp Whole Wheat Pastry Flour
  • 3/4 tsp sea salt
  • 1/8 tsp Nutmeg (Ground)
  • 1/8 tsp red pepper flakes
  • 1 tbsp extra-virgin olive oil
  • 2 garlic clove
  • 1 1/2 lb Fresh Express Baby Spinach
  • 1 1/2 tsp Lemon Juice

DIRECTIONS

1 Whisk together the coconut milk beverage (or almond milk), flour, salt, nutmeg, and hot pepper flakes in a liquid measuring cup or bowl; set aside.
2 Heat the oil in a Dutch over or extra-large deep skillet over medium. Add the garlic and sauté until golden, about 2 minutes.
3 Carefully add the coconut milk beverage mixture and whisk until thickened, about 2 minutes. Add the spinach a few handfuls at a time and cook while tossing until spinach is fully wilted, about 5 minutes.
4 Add the lemon juice, adjust seasoning, and serve.
