1. Whisk together the coconut milk beverage (or almond milk), flour, salt, nutmeg, and hot pepper flakes in a liquid measuring cup or bowl; set aside.
2. Heat the oil in a Dutch over or extra-large deep skillet over medium. Add the garlic and sauté until golden, about 2 minutes.
3. Carefully add the coconut milk beverage mixture and whisk until thickened, about 2 minutes. Add the spinach a few handfuls at a time and cook while tossing until spinach is fully wilted, about 5 minutes.
4. Add the lemon juice, adjust seasoning, and serve.
