Debby's Chocolate Chip Zucchini Cake

Need to use up all that zucchini from your garden? Here's a delicious way to do it! The original recipe (from a family friend) called for sour milk but I substituted sour cream for an extra-moist cake. I also substituted brown sugar for white granulated.

INGREDIENTS

SERVES 15

  • 1/2 cup Butter
  • 1/2 cup Cooking Oil
  • 1 1/2 cups Brown Sugar
  • 2 egg
  • 1/2 cup Organic Sour Cream
  • 2 cups Zucchini
  • 1/2 tsp Baking Powder
  • 1/2 tsp Salt
  • 4 tbsp Cocoa Powder Organic
  • 2 cups All Purpose Flour
  • 1 tsp Baking Soda
  • 12 oz Chocolate Chips

DIRECTIONS

1 Preheat oven to 325.
2 Grease and flour a 9x13 baking pan.
3 Finely grate the zucchini.
4 Cream together butter, oil, and sugar.
5 Add eggs and sour cream. Beat well.
6 Stir in zucchini.
7 In a separate bowl, combine baking powder, salt, cocoa powder, flour, baking soda, and chocolate chips.
8 Bake for 40-50 minutes.
9 Let cool before serving.
