Double Vegan Burger With Grilled Onion

Grilled sweet onions and peppery micro arugula make this burger extra scrumptious.

INGREDIENTS

SERVES 1

  • 2 pattie Vegan Burger
  • 2 in thick Sliced Onion
  • 1 Hamburger Buns, Whole Grain
  • 1/2 cup Baby Arugula

DIRECTIONS

1 Prepare grill or grill-pan.
2 Spritz both sides of vegan burger patties and Vidalia onion (or other sweet onion) rounds/slices. (Note: Do not separate onion rounds into rings.)
3 At the same time, grill burger patties and onion rounds over direct medium-high heat until cooked through and rich grill marks form, about 4 to 5 minutes per side for burger patties and 6 to 7 minutes per side for onion rounds.
4 Layer the vegan burger patties and onions in the bun along with the micro arugula. (Hint: Micro arugula can be swapped for baby arugula.) Serve with mustard or ketchup, if desired.
