A deceptive spinach salad with edamame inspired by the character on LOST.

Ingredients

Directions

* Wash spinach and toss into large bowl
* Slice tomatoes thinly and add to bowl
* Slice red onions thinly and add to bowl
* Slice egg and add to bowl
* Add olive oil to bowl
* Add salt, pepper or other spices to taste
* Toss well

* Place one-quarter of the mixture into an individual serving bowl
* Microwave on high for one minute
* Sprinkle with vinegar
* Sprinkle with fake bacon bits
* Garnish with edamame
* Garnish with avocado slices
* Repeat for three other servings (recipe serves 4)

Serve with red wine and a whole wheat baguette. AWESOME.
