Dragon fruit, also known as pitaya, has a host of B vitamins that will be fully retained without cooking. While this scrumptious dessert looks complex, it takes just a few minutes to make and has only five ingredients, including optional rosewater. (Paleo, vegan, gluten-free)

Ingredients

Directions

1. Refrigerate coconut milk or cream for at least four hours; do not shake
2. Open container and scoop solids into a bowl; discard gooey water underneath
3. Whip milk solids with a whisk until fluffy, about five minutes
4. Stir in dragon fruit puree*

If desired, for a sweeter end product you can add sugar, stevia, or other sweetener to taste.
