Egg Bacon Tomato Stack

This breakfast is a twist on the classic duo of bacon and eggs and really, you can enjoy this dish any time of day.

INGREDIENTS

SERVES 2

  • 2 slice Uncured Bacon
  • 4 Plum Tomato
  • 2 Hard Boiled Eggs
  • 2 tbsp Spring Herb Vinaigrette

DIRECTIONS

1 Cook the bacon in a skillet over medium until crisp. Drain. Chop or crumble into bits. (Note: For a vegetarian version, pan-toast pine nuts in place of bacon.)
2 Arrange the tomatoes on a platter.

4 Sprinkle with the eggs. Drizzle with the vinaigrette. Sprinkle with the bacon bits (or toasted pine nuts). Season with sea salt and freshly ground black pepper to taste.
