Egg Salad Tomato “Bruschetta”

You can never go wrong with adding an egg to breakfast. Besides the high-quality protein, you’ll be getting plenty of lutein and zeaxanthin from the egg yolks. Recipe courtesy of Jackie Newgent, RDN.

INGREDIENTS

SERVES 1

  • 1 Tomatoes
  • 1/4 tsp sea salt
  • 1 Hard-Boiled Egg
  • 1 shallot(s)
  • 2 tbsp Organic Mayo
  • 1/2 tsp Spicy Brown Mustard
  • 1 tsp Fresh Dill

DIRECTIONS

1 Cut the tomato into 4 slices. Pat dry. Sprinkle with 1/8 teaspoon of the salt.
2 In a medium bowl, gently stir together the eggs, shallot, mayonnaise, mustard, dill, and remaining 1/8 teaspoon (or less) salt.
3 Top each tomato slice with the egg salad.
4 TIP: Hard boil eggs in advance.
