This pudding gets its mocha richness from unsweetened cocoa powder and espresso. Its natural sweetness is from dates, which also boost the fiber in this unique pudding. Recipe + Image: Jackie Newgent, RDN.

1. Stir the espresso powder into the hot water until it dissolves.

2. Place the avocado, cocoa powder, dates, vanilla extract, salt, and espresso mixture in a food processor. (Hint: The fresher and moister the dates, the better the results.) Cover and blend on high speed until smooth and creamy, at least 8 minutes to fully puree the date skins, scraping down sides of food processor bowl as necessary.

3. Transfer the pudding to small dessert dishes. Chill for at least 2 hours to allow flavors to blend, and serve.
