1. Whisk together the eggs, lime juice, and salt in a large bowl. Stir in the beans, corn, and cilantro. Break the tortilla chips into small pieces and stir into the egg mixture.

2. Spritz four (2-cup capacity) freezer- and microwave-safe bowls with cooking spray. Transfer the mixture to the bowls. Top with the salsa (drained of excess liquid) and Monterey Jack cheese (or vegan cheese). Cover well and freeze.

3. To enjoy one bowl, uncover and top the bowl with unbleached parchment paper or paper towel. Microwave on HI for 2 minutes and stir well. Microwave until done, about 1 1/2 minutes more. Microwave times vary. (Hint: If desired, serve each garnished with additional fresh cilantro or a dollop of guacamole at the table.)
