This mousse-like dessert requires no dairy or eggs. Instead, avocado provides creaminess, heart-friendly fats and about 20 vitamins and minerals. Top with vibrant strawberries for a kick of immunity-boosting vitamin C.

Ingredients

Directions

1. Peel, pit, and cube the large avocado. Add the cubed avocado, preserves, coconut nectar (or honey), cocoa powder, vanilla extract, salt and vinegar to a food processor.
2. Blend until smooth and fluffy, at least 3 minutes, scraping down the sides as needed.
3. Transfer the mousse to small dessert dishes and chill for at least 2 hours.
4. Thinly slice strawberries, arrange on the mousse and serve.
