Berries are very high in antioxidants, and eating them raw leaves those free-radical absorbing compounds alive! Melons are high in potassium and very hydrating. The fun part of this dessert is that you can choose basically any fruit at all, and the dragon fruit whipped coconut cream is gorgeous and healthy bonus.

INGREDIENTS

SERVES 2

  • 2 cups strawberries
  • 1 cup mango
  • 1 cup honeydew melon

DIRECTIONS

1 Layer fruit and dragon fruit whipped cream* in glasses or bowls, placing 1-2 tablespoons of whipped cream in between each layer of fruit.
2 *Recipe for Dragon Fruit Whipped Coconut Cream:
3 Prep time: 4 hours inactive, 5 minutes active
4 Servings: 12
5 cups full fat coconut milk or cream
6 tbsp dragon fruit puree
7 Refrigerate coconut milk or cream for at least four hours; do not shake
8 Open container and scoop solids into a bowl; discard gooey water underneath
9 Whip milk solids with a whisk until fluffy, about five minutes
10 Stir in dragon fruit puree
11 If desired, for a sweeter end product you can add sugar, stevia, or other sweetener to taste
