“You can't find a prettier salad than this combination of bright fruit and tender shrimp,” says Diane Kress, RD, author of The Metabolism Miracle. “Packed with healthful antioxidants and omega-3 fats, it will help to keep your cardiovascular system young!”

INGREDIENTS

SERVES 4

  • 5 oz Salad Mix
  • 1/2 lb Cooked Shrimps
  • 1 cup Canned, Drained Mandarin
  • 150 g 1 Medium Avocado
  • 1 cup Strawberries
  • 1/2 cup Red Grapes
  • 1/4 cup Chopped Onion
  • 8 tbsp Balsamic Vinaigrette (Low Fat)

DIRECTIONS

1 Ingredients:
2 oz package spring mix salad greens
3 /2 pound medium shrimp, cooked, cleaned and peeled
4 cup canned mandarin oranges, drained
5 ripe medium avocado, peeled, pitted and sliced
6 cup sliced fresh strawberries
7 red seedless grapes, halved
8 /4 cup finely chopped Vidalia onion
9 tablespoons of bottled balsamic vinaigrette

11 Directions:
12 On each of 4 plates, arrange a small bed ofchilled salad greens, shrimp, orange segments, avocado, strawberries, grapes, and onion. Drizzle each with 2 tablespoons of vinaigrette and serve chilled.
