Garlicky-Ginger Broth With Vegetables

Use a quality vegetable broth -- either homemade or a low-sodium store-bought version -- and you will be surprised at how easy and flavorful this dish is. Recipe and image courtesy of Sherrie Castellano, With Food + Love.

INGREDIENTS

SERVES 6

  • 1 tbsp olive oil
  • 6 cloves Fresh Garlic
  • 2 tbsp Ginger Root
  • 4 cups Vegetable Broth
  • 4 cups water
  • 1 pinch sea salt
  • 1 pinch Black Pepper

DIRECTIONS

1 Heat the oil in a large skillet over low heat. Add in the garlic and ginger and cook while staring continuously for 1 minutes.
2 Turn the heat up to medium and add in the broth, season with salt and pepper. Bring to a gentle boil and simmer for 10 minutes.
3 If you are adding in vegetables, add them in now and simmer until tender.
