Craving Italian food? Give these crispy, cheesy fries a go! Zucchini is naturally low in calories, at about 35 calories per squash, so these crispy fries are diet-friendly enough to become a regular part of your meal plan.



1. Preheat the oven to 425 degrees Fahrenheit.
2. Slice the zucchini (or squash) into fries, roughly 3-4 inches long and ¾-inch thick.
3. Arrange the fries on a paper towel, place another layer of paper towel on top and blot away excess moisture.
4. Mix the almond milk (or skim milk) and cornstarch in a small mixing bowl.
5. Place the breadcrumbs, cheese, garlic salt and black pepper in a mixing bowl, stir to combine, then spread the mixture over a dinner plate.
6. Dunk each zucchini fry into the cornstarch mixture, then coat with the breading. Repeat the process again for a double-layer of breading.
7. Transfer the fries to a baking sheet lined with greased parchment paper.
8. Bake for 20 to 25 minutes until crispy, turning the fries once after 15 minutes.
9. Serve immediately, seasoned with additional black pepper to taste.

Swap the zucchini for a yellow summer squash for a delicious alternative.
