Gingerbread Cookies

These gingerbread cookies put a deliciously healthy spin on the traditional holiday dessert. The almonds in your decorative cream cheese contain a bunch of heart-healthy unsaturated fat, which reduces your LDL or "bad" cholesterol. They'll also give you a dose of vitamin E, which helps to prevent heart attacks, and potassium, which reduces blood pressure.

INGREDIENTS

  • 2 cups All Purpose Gf Baking Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 1 tbsp Ground Ginger
  • 1 tsp Cinnamon, Ground
  • 1/2 tsp Spices, cloves, ground
  • 1 1/6 cups Agave Nectar
  • 2 tsp Pure Vanilla Extract
  • 1/2 cup Cream Cheese Style Spread
  • 1/2 cup Safflower Oil
  • 2 tsp Goji Berries
  • 2 tsp Dried Blueberries & Glazed Almonds

DIRECTIONS

1 Combine the flour, baking powder, salt, ginger, cinnamon and clove powder in a small bowl.
2 In a separate large mixing bowl, mix the oil, 2/3 cup agave, and 1 tsp vanilla.
3 Add the dry ingredients to the wet ingredients and mix to form a dough. If it is too wet (measuring varies) you might want to add a little more flour.
4 Roll out the dough between sheets of wax paper.
5 Place dough in the refrigerator before cutting out the cookies to make it easier to cut them out.
6 Cut out the cookies and place on parchment-lined cookie sheets.
7 Bake for 8-10 minutes until just browned.
8 Combine the remaining 1/2 cup agave with the remaining teaspoon of vanilla and the cream cheese. You can put it into a squeeze bottle to decorate, or use a knife.
9 Add dried fruit, goji berries or nuts as decorations.
