INGREDIENTS

SERVES 3

  • 2 cups Cooked Brown Rice
  • 3 oz Savory Baked Tofu
  • 2 cups Arugula
  • 1 cup Cucumbers
  • 1 cup Purple Cabbage
  • 1 cup Raw Shredded Carrots
  • 1 cup Red pepper
  • 1 cup Organic Green Onions
  • 1/2 cup Fresh Dill
  • 1/2 cup Almonds, Sliced, Toasted
  • 1/2 cup Nutritional Yeast Seasoning
  • 1/3 cup Low Sodium Soy Sauce
  • 1/3 cup Raw, Unfiltered Apple Cider Vinegar
  • 1/3 cup Water
  • 2 tbsp Tahini
  • 2 tbsp Garlic
  • 1/2 cup Canola Oil 100% Natural

DIRECTIONS

1 For the dressing:
2 Using a blender or an immersion blender, combine the nutritional yeast, soy sauce, vinegar, water, tahini and garlic.
3 Add the oil in a slow stream until combined.
4 Store in a lidded jar and refrigerate. (It should last at least a week in the fridge, so use it over salads or as a dip throughout the week.)
5 To prepare bowl:
6 Layer a bowl with ingredients, starting with the grains first and ending with the almonds, and then drizzle with the dressing.
