These are a delicious, gluten-free alternative to a classic, homey favorite.

Directions

1. Blend together eggs, oil (melted & cooled), honey, salt, vanilla, and almond extract.
2. Combine coconut flour with baking powder and thoroughly mix into batter until there are no lumps. 3. Fold blueberries into batter. Blueberries should be dry. If rinsed, dry them off before adding to batter. 4. Pour batter into greased muffin cups.
5. Bake at 400F for 16-18 minutes.
6. Let cool before removing from pan.
