Buffalo cauliflower has been trending for a while now; you simply cook cauliflower florets and add a buffalo sauce. The results bear a resemblance to chicken wings -- minus the chicken, of course! Those are great, but they aren’t really filling. With this recipe I add a fun step: making the cauliflower into a tater tot shape. The end result is worth the time it takes because you have a treat reminiscent of childhood, but much better for you.



Tot filling ingredients:
1 head cauliflower, riced in a processor and steamed until tender
2 eggs
2 tbsp almond flour
1 tbsp chickpea flour
1 tsp butter
3/4 tsp garlic salt

Tot coating ingredients:
2/3 cup water
1/2 cup chickpea flour
1/4 tsp salt

5 tbsp Louisiana hot sauce
3 tbsp cultured butter

1. Preheat oven to 400 degrees. Mix all filling ingredients together, then roll into little tot shapes by teaspoon full and place on a parchment lined cookie sheet.
2. Bake for 20 minutes, until firm and golden.
3. Mix coating ingredients together and dip each cooked tot in coating.
4. Bake at 400 degrees for 10 minutes.
5. Melt butter in a sauce pan and add hot sauce; mix well.
6. Pour buffalo sauce over cooked tots and stir well.
