Directions

1. Preheat oven to 350F.
2. Put almonds in an oven-safe pan and bake for about 8 minutes or until lightly browned.
3. Remove from oven and let cool.
4. Mix together butter, sugar, salt, eggs and almond extract.
5. Stir in flour, coconut and toasted almonds.
6. Let batter rest for 4 to 5 minutes to allow it to thicken slightly.
7. Drop batter in spoon-size mounds 1 inch apart on greased cookie sheet.
8. Bake at 375F for 15 minutes or until lightly browned.
9. Cool slightly and remove from cookie sheet.
