A recipe from Nutrition Styles, vanilla-flavored Replenish pea protein serves as the base, and coconut milk and coconut milk give it a tropical taste. Fresh berries on top are a cute addition to these adorable and delicious little pancakes.

1. Sift protein powder, coconut flour and salt together into a batter bowl.
2. Mix all remaining ingredients in another bowl and then add slowly to dry ingredients whisking until smooth. Let stand at room temperature for 15 minutes.
3. Brush bottom of a heavy skillet or pancake griddle with coconut oil and set over medium heat. Heat until a drop of water sizzles and evaporates immediately.
4. Stir batter and then pour approximately ¼ cup of batter into 4-inch circles, allowing plenty of space between each.
5. Cook until bubbles form on surface and edges are cooked. Flip to cook other side.
6. Serve immediately topped with your choice of fresh berries.

    Since so many calories from coconut oil(even though it is a good oil) and I hate wasting the egg yolk, I omitted the oil and use two large whole eggs. By my reckoning the whole batch is 430 cal, and 43 g protein, made 10. I just threw it all in a food processor, took no time at all. Quite moist, has coconut flour texture of course, nice flavour, fall apart easily. I stacked with a teaspoon of Greek yoghurt and drizzle of fresh passionfruit.

    haven't tried yet but there is a typo in the description . you have coconut milk twice .. they sound delicious can't wait to make them
