Gluten-Free Ice Cream Protein Sandwiches

Why not get your protein fix in dessert form? These waffle ice cream sandwiches from Vega use Vega Sport Performance Protein Chocolate or Vega One Chocolate to make this crowd-pleasing summertime favorite satisfy your hunger in addition to your sweet tooth. Made from frozen banana with a little vanilla extract, the "ice cream" is more like nice cream. No guilt with this pleasure.

INGREDIENTS

SERVES 5

  • 1 1/2 tsp Ground Flax Seed
  • 1/4 cup Water
  • 1 1/2 cups Gluten Free All-Purpose Flour
  • 3 scoops Protein Powder -chocolate
  • 3 tbsp Cocoa Powder, Natural Unsweetened
  • 1/4 cup Cane Sugar
  • 1/2 tsp Baking Powder, Featherweight
  • 1/2 tsp Baking Soda
  • 1 pinch Salt
  • 1/4 cup Natural Peanut Butter
  • 1 tbsp Raw, Unfiltered Apple Cider Vinegar
  • 1/4 cup Vegetable Oil
  • 1 1/2 cups Almond Unsweetened Milk
  • 4 medium Banana!
  • 1 tsp Pure Tahitian Vanilla Extract

DIRECTIONS

1 For the waffles:
2 Heat waffle iron.
3 Make flax egg by combining flax and water together in a bowl and setting aside.
4 Combine gluten-free flour, protein powder, cocoa powder, sugar (you can substitute with coconut palm sugar), baking powder, baking soda and sea salt in a bowl.
5 Combine peanut butter, apple cider vinegar, oil and almond milk with flax egg.
6 Combine wet and dry ingredients until a batter forms. Batter should be thick.
7 Cook waffles according to waffle maker instructions.
8 For the ice cream
9 Combine sliced, frozen bananas in a blender with vanilla and process until smooth.
10 Enjoy immediately or freeze overnight for a harder texture.
11 To assemble the sandwich:
12 Put banana ice cream in between 2 room temperature waffles.
13 Wrap and freeze for future use or eat immediately.
