5-Minute Gnocchi Alla Checca

Pasta alla checca is a delightful Italian pasta dish made with fresh tomatoes, basil, mozzarella, garlic and olive oil. In this recipe you’ll boil gnocchi (which takes all of three minutes!), then drain it and toss with halved cherry tomatoes, bocconcini (fresh mozzarella balls), minced garlic, extra-virgin olive oil, fresh basil leaves and sea salt. Or you can make most of it in advance, chill and reheat.

INGREDIENTS

SERVES 12

  • 2 lb Gnocchi, Potato
  • 2 cups Cherry Tomatoes
  • 2 tbsp Olive Oil, Extra Virgin
  • 2 clove garlic
  • 3/4 tsp Sea Salt
  • 1/4 cup cold water
  • 8 oz Bocconcini
  • 20 Fresh Basil Leaves

DIRECTIONS

1 Boil (fresh or frozen) gnocchi according to directions, or about 2 to 3 minutes.
2 Drain and transfer to a 1 1/2-quart microwave-safe dish. Add tomatoes, olive oil, garlic, and salt and stir well.
3 Cool slightly, loosely cover, and chill until ready to serve.
4 Uncover and stir in 1/4 cup cold water. Cover with unbleached parchment paper.
5 Microwave on HIGH for 2 to 3 minutes, or just until gnocchi is hot. (NOTE: Microwave cooking times vary.)
6 Sprinkle with bocconcini (fresh mozzarella balls) and basil.
7 Serves 12 as a side dish or 6 as a main dish.
8 Note:
9 Alternatively, for a superfast fix, skip the chilling, microwaving and 1/4 cup cold water; toss the bocconcini and basil with the gnocchi mixture at the end of step 1; serve immediately.
